Chocolate Chip Banana Bread

Ingredients

  • 100g coconut flour
  • 50g vanilla whey
  • 100g spelt flour
  • 2 eggs
  • 3 bananas
  • 60ml agave juice
  • 100ml buttermilk
  • 60g coconut oil, melted
  • 60g chocolate chips
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Vanilla, cinnamon as desired

 

Directions

Pre-heat your oven to 200 degrees Celsius.

Puree your bananas.

In a bowl, combine bananas with eggs, agave juice, buttermilk and coconut oil.

Stir in flour, whey, baking powder and baking soda.

Do not overmix.

Now add the chocolate chips.

Cover a baking form with a little coconut oil, pour in the batter and bake for about 35-40 minutes on the lowest rack.

After 10 minutes baking time, turn down heat to 175 degrees Celsius.

Once the bread is baked, let it cool down.
